I have recently been fitted for a set of ping g25 irons green dot half inch longer shafts gold grips the same specs as I have been using for the last 20 years
i have a problem hitting a lot of shots of the toe more so in the longer irons when I set up to the ball there is a lot of sticking up and the clubs feel to upright.
Would the lie angle be the cause of the toe shots
i always considered ping to be very consistent on custom fit orders but I am sure the lie angle is more upright than the green should be
 
I think you should just get the angles checked. It's easy enough to do and would give you piece of mind. Let us know what the result is!
 
Custom fit or not, get them checked. Both loft and lie.
