Rubbed and warming before going in the egg, pot of Boston baked beans in the crock. Going to be a long night.

Still at 14 lbs after trimming the hard fat

Couldn't stand waiting and put it in the egg, holding steady at 210. About 14 hrs from now we will see. Going to foil it at 160 deg or so and let it come up to 200 then 2-3 hrs in the cooler.

12 lb brisket on the BGE this morning. Doing 2 things differently. In addition to my usual yellow mustard coat and dry rub, injected with some beef broth/Worcestershire. I did so because I’m trying the ‘high heat’ method (Myron Mixon style). Just didn’t feel like spending 15 hours on a holiday.

I’m also trying JB’s Hasselback potatoes to go with...

Getting out of gas grills for the first time in 15 years...can’t wait to get back to basics.

Our backyard kitchen is getting a makeover coming up over the next couple of weeks. 36” Blackstone is gone. Kamado Joe will Be gone.

In its place are a 17” Blackstone griddle and Napoleon Prestige Pro 500.

We also ordered some cool modular storage that will be here in a couple of weeks. Really making the setup super functional and filled with appliances that will all get use.

Really good. Brisket was very tender. High heat method is no lie.

It’s my new go to. Absolutely love it. Add some compound butter or something and it’s amazing.

I need one of these to supplement my pellet smoker I think

Haha! I just got a pellet smoker to supplement my Weber kettle.

First run with the Weber kettle was a success...

Pics or it never happened.

Can’t move...leftovers in the fridge, planted on the couch to see if Georgia can live up to all the talk vs Texas...

For those using a Weber kettle for some of your outdoor cooking be sure to pick up a Slow 'N Sear. It's the best performing accessory I've yet to come across. I use Kingsford professional in mine and it makes a 4-6 hour cook a breeze.
