Boiling down the turkey carcass today in preparation for my Smoked Turkey Soup, and the whole house smells amazing.

Mom's Thanksgiving dinner, we had the in-laws dinner at Perry's Steakhouse in Franklin, Tennessee.

That's such a great thing to do. What seasonings are you putting in with the bones to bring out the flavor for your soup?

Onion, garlic, salt, and a seasoning blend that I use a lot. I don't overdo it though, the smoke flavor really gets pulled out from a smoked turkey, and I don't want to dilute that with too much other stuff.

That's basically what I'm using for mine too, going to be great for dinner after doing yardwork this afternoon

Dinner here tonight too!

I'll take a big pot of the broth, a bunch of the turkey meat, add Yukon Gold Potatoes, Carrots, Corn, Green Beans, Onion, and Celery. A big bowl of this soup, some cornbread to go with it, doesn't get much better! :drinks:
