Bingo! There's a little tavern/restaurant right down the road from me. They do fish on Fridays as do many places around here. I stopped in and ordered a fish sandwich with mac & cheese. OMG! The mac & cheese was so good, with real, honest to God cheese melted in it, not that hideous orange powder that you get with the storebought stuff!

Uh, NO! It is not! Maybe they do things differently down there in Texas. Up here, it is plenty thick enough to be eaten with a fork!
