Do you consider sole and bounce when you buy a set of irons? I’m betting you do, and with an iron it’s never as big as the difference between 14* and 8*.
(It also sounds like you have very little experience playing off tightly shaved Bermuda grass)
I keep saying it (and I realize how annoying it can be) but i don’t think a lot of people really understand what being a scratch golfer is. Especially from the Senior tees.

Just out of curiosity how does the offset and GI correction on your 0211’s and your 921 HM‘s compare to the DCB?
It’s all personal, but I found the 0211’s to pretty much mirror the DCB ( except one was cast the other was “forged”) and the Hot metal 923 more forgiving than both.
You played some damn good golf with those DCBs for a long time. I totally understand being excited over your Srixons, but with all due respect, I think you’re overstating things a bit here. Especially since you’re playing the Recoil Darts in both sets.

I’m surprised you’re seeing that much difference between the ZX5 and the DCBs. To me the Srixon 5’s compare to the Apex 21’s and while there was a difference between them and the DCBs it wasn’t really all that much.
I’m not disagreeing with you or @1860VS here, but I think most of us need to remember “senior golfers” is a term with a very wide parameter. 50 year olds consider themselves, and play in Senior tournaments yet my game is nothing like it was 20 years ago when I was 50.
