Leaving the heel keeps the nest piece of bread fresh. Skip past it to the second piece. Going to the middle is a psycho move.

I eat everything so I would just use the heel on the first sandwich out of the bag. That said, I never eat that type of bread anymore. Usually just grab a fresh made loaf and slice it myself.

The heels are the last to go in my house - probably some urban myth that they help keep the better slices from drying out.

I skip the heel and the one after it, and do the same at the other end.
 
It depends on the type of bread.
-regular sandwich bread? Skip the heel and get to the first real slice.
-baguette, rye, pumpernickle, fruit breads, cinnamon breads, fancier breads..... load on the butter and eat the heel piece.

I usually will skip the first two or three slices, and go for larger pieces of bread, leaving the smaller pieces for the kids.
 
I use the heel as a "freshness protector"...the ends are the last two pieces and rarely get consumed.

No, I do not know why I think leaving it will make the other bread stay fresher longer. I am sure science does not back me up on that.
