Not windy day is an oxymoron out there.

Indeed. I've played there first thing in the morning, and it was a windy day. You can avoid "gusty," possibly. But "windy" is always in play there.

I need to get back down to Kiawah.

Muirfield
Turnberry
St Andrew's
Royal Birkdale
Carnoustie
Royal Lytham & St Annes
Gleneagles
Royal Troon
Wentworth
Celtic Manor

And some that are a bit more realistic that I will definitely play at some point...

Ganton (drove and had a look at this a couple of weeks back, looks impressive)
Loch Lomond
St Andrew's (New and Castle)
The Belfry (Brabazon)
Seaton Carew
Close House (Colt & Filly)

The Bucket List:
1. St. Andrews
2. Whistling Straits
3. Sawgrass
4. Royal Troon
5. Bandon Dunes
6. Arcadia Bluffs
7. Bethpage Black - Accomplished Twice
8. Torrey Pines - Accomplished

I could probably list a few others.
