Golf is clearly number one from this list imo in terms of requiring physical skill. Shocked how many people are putting fishing near the top, same for motor sports.

esports is the toughest to grade and clearly the most underrated. The skill gamers have is insane and not something that just anyone can do. A lot of things on this list I think the general public could get very good at through repetition but top level gamers have a huge degree of skill. Esports have a massive future in terms of membership, crowds at events, and viewership. The money for them may surpass a number of huge sports very quickly. It's hard to categorize it a sport but it's definitely a fast growing competition.

I think one of the big parts of a "sport" to me that isn't talked about much is the abilify to effect your opponent's success.

Out of the provided list
Golf, bowling, fishing, bull fighting - no direct ability to do this (you are playing against yourself then comparing)
cornhole - minimal
Racing, poll, esports, poker - yes, there is direct competition
 
Things that I’ve done personally are sports. Things I have no knowledge of are not sports. Easy.

Seriously though, whether or not it’s athletic depends on how the player approaches it I think. There are quite a few football or baseball players in the professional ranks that I wouldn’t call athletic. They don’t get a free pass just because they play a “real” sport.
 
1) Pool - It is undoubtedly the hardest sport I have ever played. I would also argue the hand eye coordination needed to compete on the highest level, compares to any other sport. The demands mentally and physically are extremely underrated.
2) Golf - Clocks in just underneath pool for me.
3) Horse Racing - only because I have been known to bet the pony's on occasion
4) Esports - One of my nephews friends, who is also the son of a late friend of mine. Is one of the best Madden players in the world, and has won the madden bowl twice. Puts it in my top 5.
5) Poker - I used to enjoy a game every now and then
6) Bowling - I suck at the game but have a good time when I go bowling. Plus I enjoy watching it on TV
7) Fishing - Kevin Van Dam is the man, that is about the extent of my fishing knowledge
8) Motorsports - only because I find it boring, with exception of F1 qualifying and certain F1 races
9) Corn Hole - have never played, the guys at the club suck and the guys on TV are really good
10) Bull Fighting - something had to be 10

From the above list horse racing is the only one I label a sport, and even then the horse are the atheletes.
Maybe bull fighting, I don't know enough about how much running the bullfighter must do.
Golf and bowling are games,not sports.
 
motorsports (F1, nascar, etc) -- This is top just from the skill and endurance factor. also, higher chance or injury.
bull fighting -- lots of evasion and you are trying not to get gored to death.
golf -- A lot of mechanical stuff and skill plus you gotta walk far
bowling -- A lot of mechanical stuff and skill but you don't have to walk far.
pool-- a lot of skill and geometry. Not much walking.
fishing -- not very mechanical but skill needed(lure choice, watercraft, ect). using a trolling motor with a foot pedal is a sport in and of itself.
horse racing -- You only go around the circuit once. Horse does most of the work. Can get trampled, though.
cornhole- you stand around but its simple mechanical skill. Still not easy but no walking. You can throw your back out, maybe.

eSports - Coordination and skill, but your sitting down. Carpel tunnel and hemorrhoid chances high, but survivable. its close but not enough to make sport.
poker - No coordination, some skill, mostly luck as you are at the mercy of the draw. Same injuries as above, maybe a paper cut here or there.
 
For those that don’t think the jockeys don’t do much in horse racing are missing the boat.

The amount of skill and difficulty level of being a professional jockey is mind boggling.
 
With out actually doing these things it’s hard to chose I’m sure. Having done tournament bass fishing for over 20 years it is far more demanding then some of these others. Some of the others I’ve never done.
However 4 of those I consider games not sports
 
The only thing I’ve concluded from reading through this is that F1 is getting some major disrespect.
