Ever since I started doing this way a few years ago it is the only way my wife wants it. I brine it in grapefruit & pineapple or orange juice for about 2 days & then stuff it with citrus & smoke it breast down overnight at about 150 & then to about 250 in the morning.Let’s go!!! Bird is buttered and seasoned and in the smoker as of 630.. there's a base of mayo w/ seasoning underneath that top dusting, it comes out good!Who is up cooking already???
