That sounds really good. Hopefully the malt characteristics will be able to balance that hop explosion. Let those sit in the bottles for a month or two and they should be perfect for those cold winter months ahead (Then again you live in AZ so I doubt you see cold winter months..lol).Just stumbled across this thread in wandering the forums during some down time. As a home brewer, it's always good to see some beer enthusiasts. Here's my current batch going on it's fourth month in secondary fermentation. This pic is about a week into it, so that explains why the top layer hasn't settled, yet. It's an imperial stout; 1.13 OG, 13.12 ABV. It's hoppier than most imps at 67.1 IBUs, but I tried something different this time as an experiment after feeling the 45 IBU version last year was missing some bite. Should be bottling in another month, so I'll let you guys know how it turns out.
Let me know how it comes out. My wife got me a brew kit a few weeks back, and I am about to brew my first batch of IPA.
I hope it turns out good. I've been drinking 60 minute ipa this week, love that beer.I just moved the beer over to secondary fermentation last night. It will be ready early next week. I can't wait. I am working hard to finish the keg that is in my kegerator right now. Though job, I know.
