I was thinking about red beans & rice for a side this weekend's pool party which is also featuring skirt steak tacos. Maybe I make a fusion Mexi-Hatch chili red beans & arroz rojo...? Makes one think...

Got some sweet chilli salmon fishcakes with some herby potatoes and corn on the cob for this evening
 
Leftover ribs, corn, and cooked up from egg fried rice

Tricolor cheese tortellini with brushetta topping.

Problem is, I cannot stand that pasta lol.
 
Made turkey sausage stuff eggplant parm tonight. This recipe needs some tweaking. It has potential, but it’s not quite there yet.

Feeling simple. Like breakfast for dinner. Sausages on the griddle, buttermilk whole wheat pancakes to follow. I'll drop in some blueberries for those so inclined.
Real maple syrup. High fructose corn syrup is not allowed in my house.......... just like my real butter rule.... and no white bread rule. LOL
