Last night was homemade Jambalaya and tonight is leftover Jambalaya.

Fajitas tonight.... It's Cinco de Mayo!
 
Pasta, pesto and pine nuts. Joked with wife that everything had to begin with P, so had a Pepsi with it too. :)
 
How convenient. Cinco De Mayo and its Taco Tuesday. Isnt it? Like, the days all run together with this virus.
 
My wife is making a Mexican Lasagna. We never have had it before but it smells really good cooking.
 
Having pork tacos tonight with some homemade guacamole.
 
Feel like I dropped the ball not having tacos tonight... ribs are about to go in the oven!
 
Leftovers..... BBQ chicken or ribeye steak or chicken enchiladas. Haven't decided.
