Iron Lie Angle Adjustments

When you go into get lie angle adjustments on your irons, do you hit every iron in your set or just the 6 iron? Reason I ask is because I feel like I hit my longer irons with a more higher wrist action causing the head to be more toe down at impact and my shorter irons from 7 and up more toe up which needs adjustment soon.

You could use a single irons (5, 6, 7) as a starting point, but all irons should be hit to ensure they fit. A good clubsmith should allow you to come back, within a reasonable timeframe, for tweaks. I'd start out with one or two irons, set them all to spec based on that, then hit the range to see if the need tweaked.
 
My guy did mine off of the 7 iron. He set all my irons at 1 1/2° flat then went back and had me hit all of them just for a check. Everything was spot on. I do have them checked once a year to make sure that haven't changed any.
