21 day fix chicken enchiladas.. And good lord, they are amazing!!!
Rotisserie chicken w/ Monterey Jack cheese in wheat tortillas
Enchilada sauce (diced tomatoes, salsa, Greek yogurt, stevia, sautéed onions)
Put the chicken and cheese in the tortillas, lay them in the pan. Cover them with enchilada sauce and add a small dusting of cheddar cheese. Bake at 400 degrees for like 10-15 minutes until cheese is melted.
