    Omaha Steak Filet Mignon burgers Sous Vide’d and kissed in a cast iron skillet medium rare here tonight. I don’t want to fight the monsoon to finish them on one of the grills. Don’t have any dang buns so they’ll be rednecked up and served on wheat bread.

    The Anova came through. Took a mini nap once I chucked the Filet Mignon burgers in. I woke up to my wife squeaking/screeching “when’s the food going to be done??!?” Then I got yelled at because I didn’t have any buns (I grew up eating burgers on bread, it ain’t exactly gonna kill you). I’ve spoiled them all around here. You just can’t expect fresh bakery buns every time you have a burger, or at least you shouldn’t, lol.

    Heated up the cast iron, kissed them with it, dinner. Find your own sides.

    One of the better burgers I’ve had even. 135* Sous Vide for 90 minutes (woulda went 60 minutes but started frozen). 800* skillet for 20-30 seconds a side, perfectly juicy medium rare burger. I wish I’d have cooked another, but I’ve gotta watch my figure:)

    I got a deal? Lol. Omaha Steaks had an error in their system last winter and I bought $500.00 worth of meat for like 69.99. I took advantage, buying like 8 of those deals before they realized it. They honored it though (I didn’t ask, they just did) so we’ve had good meat all year. I’d lie if I said I was sick of Filet Mignon burgers, but I’m down to my last batch next time. Still have a couple dozen Filets for when I actually have time for a steak dinner once my coaching obligations end in about a month. Late summer through early fall will be steak dinner time here.

    We ate them on bread because at the end of an almost 100 hour work week (I work, I coach, and I sleep), I was too beat to drive to the store to get good buns.

    I’ll go with charmed yet dead tired, Lol.
