Been looking at buying an Adams Red 18° but when I hit it on a mat in the store it's obviously too upright. Hit it great when I come in steeper but that's not my swing. All my irons are 2-3° flat due to "monkey arms". I would rather not send it back to Adams so ... ???

I heard very few people are willing or have the equipment to do it.

The other option would be extend the shaft so it's at a shallower angle.

Take it to a local club fitter. It needs a special vice/clamp and heat with a bending bar. I have snapped a few. 3* is pushing it
 
3* is too much for my touch. It kills the warranty and it's going to be extremely difficult to do without breaking, specially for a hybrid.
 
If you do attempt the bend remove the shaft, install a steel .370 to keep the bore round, apply a ton of heat rotating it, bend the hosel from the upper section, not the lower. They snap from the lower portion, were its more rigid. A bend is more likely from the hosel that holds the shaft... or just below that is the bend spot/bottom of the bore. good luck
