This thread makes me unbelievably hungry (and I just ate lunch). I'm thinking bacon is going to have to be a significant part of my dinner tonight.
 
C-Mac at what temp did you smoke it. 100 degrees until it hit 150 internal? I'm using apple and cherry wood with a cure of brown and maple sugar kosher salt rosemary and savory with a touch of paprika and fresh cracked pink pepper.

I did smoke it to an internal temp of 150F but I had my smoker @ 200-225F through out the process. I like the idea of the rosemary. I'm picking up another belly today and may try something different this time. I have a pretty nice herb garden going that will make for some nice flavors.

That's for sure. I can't stand turkey "bacon".

Worse than turkey "bacon", they actually make vegetarian "bacon"....... Vegetarians and Vegans always try to convince me how good vegetables taste and usually have no answer when I respond "If vegetables taste so great, why do you keep trying to make them taste like animal flesh?"
 
One of the best bacons I have found is from an unexpected place. The Great Value (Walmart brand) Pepper Bacon is the jam! It's thick slice and absolutely coated in pepper. Pretty much anytime we have bacon in my house, it's that one. We have tried other pepper bacon and nothing has come close yet. Give it a try!

I've had that and it is pretty good, but there's a local butcher shop here that makes it's own peppered bacon and it is out of this world, especially since you can ask him to cut it whatever thickness you want. Of course I'm going with thick, but it's nice to have the choice.
 
Good bacon doesn't need pepper. :)

That is good stuff. I like it for cheesebugers, sanwiches and other lunch or dinner applications. For breakfast bacon I'm a big fan of the Costco Maple Bacon. You of course have to buy a metric "bleep" ton of it but it's bacon so it keeps.
 
After my first run of curing and smoking bacon myself I will never buy bacon from the market again. It's so easy and so much better. 5lbs to go to do it all over again.

Started curing 2 3lb slabs of pork belly. One is maple and brown sugar and the other is cracked pepper and rosemary. These will cure for 6 days and then will be smoked prior to slicing.

Who doesn't LOVE bacon? Seriously, if you don't love bacon, you need to be checked out by a head doctor!
 
What's funny is I love bacon so much my wife says I need my head checked for that.
