Whats for Breakfast/Lunch?

Lunch was 2 pepperoni hot pockets. Forgot my lunch on the kitchen table and had to eat vending machine food at work. yay.
 
I gave this recipe for pancake bites (basically a pancake muffin) a try and it was great, it's perfect for grab and go, or it would be a lot of fun for kids. I just ate a poke bowl with so much garlic in it, I am going to have to brush, floss, and mouthwash 5 times today just to make a dent in getting this garlic out of my mouth.

I have been in a very quaint local hotel in Belgium. Breakfast has been breads, a few cereals, cold cuts and coffee in a very small cup. I cant wait for my big stainless mug of coffee and a ham and cheese omelet. I thought these folks did waffles.

Sure, this is just something I came up with over the years.

Coconut Almond Overnight Oats (I think it tastes like a coconut biscotti)
- 1/2 cup quick cooking oats
- 2/3 cup milk of choice (I use unsweetened vanilla almond)
- 1 tsp chia seeds (if you want it thicker than add more chia seeds)
- 1 TBS unsweetened shredded coconut
- 1/2 TBS slivered almonds
- 1 tsp maple syrup
- splash of almond extract (a little goes a long way)

For the coffee one, I changed the milk to cold brew, almond extract to vanilla extract, omitted the coconut and almonds, and doubled the chia seeds.

I put everything in a mason jar, shake and put in the fridge overnight.
