I am considering having my irons bent 2 degrees flat. (yes my heel is low during a normal swing) My question is, how will this effect my normal ball flight?

I also have my irons bent flat. If your ball flight is low and left, flattening them should make it high and less left. Maybe even right.
 
Shoot make it go straighter. If your heel hits first you may tend to hook easier as the clubface will become closed.

All things being equal, flattening your irons' lie angles will result in your ball going straight (assuming that it's going left while your irons' lie angles are too upright).
 
If the toe is up before you bend the irons, then your shot should be starting a bit left. If they are bent properly, then effective loft will not change, and ball flight should not be altered, except the ball should start off straight.
