i think ill have another dinner... after dinner... dad hooked up some seafood earlier

Ok so my mom is back in Jersey and will be back in a week. Need to comprise the 'what food to ask her to bring down' list. Pizza is on there and I'm deciding between this awesome fried chicken called Bon Chon or paella from this place we used go to in Newark. Hmmmm... choices.

We have been really good about staying in and cooking dinner lately. Tonight we had a delicious meal. Baked Hog Fish, polenta, and a baked potato with this amazing cheddar cheese with chives in it.

I had never had polenta before let alone make it but it's delicious and really easy to make.

does bangus = hogfish... i thought bangus was like whitefish?

bangus = milkfish
nope just soy, vinegar, s&p and my wife makes this tomato and egg salad that goes good with it.

So, I work in a casino here in Vegas and we're given free food downstairs in the EDR. (Employee dining room) The food is so bad that most times I either bring a sandwich from home or spend my own money and go upstairs to the foodcourt. Lately a common converastaion topic at work has been the absolute bizarre specials they've been serving. I thought I'ld share them with you:

Chicken Breast with Blue Cheese Sauce
Pork Loin with Dried fruit sauce
Spam (no explanation on how its prepared. just spam)
Red Snapper with Mango & Cucumber Salad
Birria de Res Colima Style (this was a contest winner that I'm sure is delicious when made at home with real food and ingrediants. At work it was a odd stew like substance that was both red and green at the same time.)

Some of these dishes might sound appetizing but keep in mind they're being prepared in a aux kitchen where all the best ingredients and food go to the real customers upstairs. I'll try and update with pics if there's anything interesting/unidentifiable downstairs.
 
Italian Sausage with grilled red, green peppers and onions on homemade buns, potato salad (from deli), and home made cookies for dessert (testing cookie recipes for THP Fall Outing and a certain friend's care package that is being mailed out tomorrow). Probably wash it down with a Dirty Blonde Ale from Portsmouth Brewery (http://portsmouthbrewery.com/our_beers_brewery/standards.html)
