Tonight I rotisseried 2 chickens. Made a nice plum glaze and a mango chutney to garnish. Buttered parsnips along with some seasonal squash complimented the dish well. I also paired the chicken with a tossed green Caesar salad. I ended up opening a nice Pinot Grigio to breath during prep from a local vineyard. All in all it was a perfect late summer meal for the wife and I.
