Depends on the cheese... a nacho cheese style sauce (think taco bell cheese) or moe's queso style, than cheese... otherwise just ketchup

Based on your choices that you're giving and that it is a Hot Dog not a Chili Dog, I have to say mustard and onions.

These are the best Hot Dog toppings though and they must be together:

From the options given, mustard and onions. If I were to find other options it would be brown spicy mustard, onions, hatch green chiles (if you haven't tried it you should). I seem to be more New Mexican than Texan in some aspects. I do live closer to the New Mexico State Capital than I do to Texas State Capital.
